Todd Chaisson - Head Chef
Smokin' Rock N' Roll Food Truck
Todd began his culinary journey in Los Angeles in the ‘90s. While taking time off as a touring musician, he worked the line at one of the most popular Mexican restaurants in Hollywood, Comachos at Universal City Walk, where he developed his love for ‘from scratch’ cooking. Over the next decade, his dream of one day having a food truck began to take shape.
In 2011 Todd moved to Cleveland, Ohio and took a position at Mad Jacks in Aurora where he studied under Chef Erik Gaizutis. Todd spent a few years honing his ‘from scratch’ skills and mastering classic American comfort foods. He then went on to work with the brilliant chefs at the popular restaurant Crumb & Spigot in Chagrin Falls before partnering with Billy Morris to launch Smokin’ Rock N’ Roll in 2015.
During the off-season in 2016, Todd helped launch the new Bernie Kosar branded smokehouse in Solon, The Tavern on 91.
While Todd originally inherited his passion for food from his mother, he continues to be inspired by his family, friends and love for rock music. This inspiration is the driving force behind his dream, Smokin’ Rock N’ Roll. Today, Todd and Billy are working together to develop a street friendly smokehouse menu that promises to rock food lovers all over Ohio.
This Spring and Summer, you can find Todd, Billy, Shredder the Pig and the Smokin’ Rock N’ Roll food truck on a street near you!
